Job Description :
As a Head / Second in-charge of a Section in the galley (kitchen), you will be responsible for a team of 6-8 chefs and will be part of a 100 strong galley brigade of multi national staff.
You will have the oppurtunity to work in all sections of the main galley i.e. larder, grill, sauce,fish, etc. and other dining options on board a cruise ship. The positions demands hands on cooking skills in continental cuisine.
The job responsibilities include:
> Ensure the smooth and efficient operation of the allocated section in the galley.
> Prepare and present food as per the Corporate menu cycle and company standards.
> Maintain exceptionally high standards of hygiene as per the Company Health and Safety Policy.
> Maintain records of equipment in allocated section and report any defects.
> Indent stores as per requirement
> Maintain food costs as per budgets
> Conduct training of staff in a team as well as one-to-one.
Eligibility
Educational Qualifications:
3 year Degree / Diploma in Hotel Management from a reputed institute
Intermediate Hygiene Certificate desirable.
Professional experience:
Minimum 2 years as Chef de Partie or senior in a 4 / 5 star hotel or fine dine continental cuisine restaurant. Previous cruise ship experience will be a definite advantage.
